How we began… Grandpa Manuel worked and saved money. He opened the first known Mexican Restaurant behind the Ben Knox Saloon, near the railroad depot in downtown Bryan, and operated it for 20 years. His homemade Mexican Stew, our now famous Chili con Carne, and other dishes were very popular with the locals and travelers who stepped off the train at the nearby depot. In 1978 his grandson Richard A. Rodriguez and his wife Beatrice opened the doors to Casa Rodriguez with the blessings of Paul L. and Consuelo (Chelo) Rodriguez. It was located on South College in the old Buccaneer. Thanks to Grandpa Manuel and Mama Chelo’s recipes, the Brazos Valley can continue to enjoy great food.
